I’m excited to share with you one of my favorite springtime recipes–Lilac Infused Honey.   Yes, lilacs are more than just pretty flowers–they are edible and absolutely delicious!  Today on the blog, I’ll show you how to make and use lilac infused honey.

It’s amazing, I’ve had one or more lilac bushes growing in my yard since I was small and never realized they were edible until last year!

Once I found out this amazing news (lilacs are some of my favorite flowers!) I went a little lilac crazy and took full advantage of the four lilac bushes growing in our yard.   Who knew lilacs could be so versatile?

Two of my favorite lilac creations from last spring were a delicious lilac jelly and today’s recipe, Lilac Infused Honey.

The lilac jelly was a huge hit with my family and friends (it made such a unique gift!) but  I have to admit, I hoarded the Lilac Infused Honey a bit!

It was insanely good!     One taste of lilac infused honey and you know you are tasting lilacs.

I promised myself that this year, I would make plenty more lilac infused honey because it was gone way too fast!

How to Use Lilac Infused Honey

 

  • as a spread on toast, bagels, sandwiches, etc.

  • drizzle over pancakes and waffles

  • drizzle over baked goods and ice cream (add some fresh lilac flowers too.)

  • as a sweetener for herbal tea or lemonade

  • as a sweetener for Fire Cider 

  • make some Chamomile & Lilac popsicles 

  • mix with powdered herbs such as astragalus,  eleuthero root, maca powder or other herbs, roll into a ball and make an herbal pill.   A spoonful of honey makes the medicine go down!

  • take by the spoonful to supress a cough

  • apply to your face for a healing face mask

  • add to homemade body scrubs 

  • mix with ground oats or almonds for a face scrub

  • add 1/2 teaspoon to your homemade lip balm (strain first)

  • package in a pretty jar and give it as a gift

How to Make & Use Lilac Infused Honey

A delicious, springtime treat to drizzle over desserts, ice cream or used as spread.

Ingredients

  • lilac petals, whole or separated (avoid any hard stem bits for this recipe)
  • pourable raw, local honey

Instructions

  1. Fill a glass jar 3/4 of the way full of lilac petals.
  2. Pour the honey over the lilac petals, filling the jar almost to the top.
  3. Stir well to incorporate all the petals into the honey.
  4. Stir every day for 2-4 weeks until the honey becomes infused with the lilac petals.
  5. Stain if desired by heating the honey gently in a double boiler and then straining with a fine mesh strainer) or leave the petals in.
  6. Store at room temperature.
